MAKHANA

Makhana, also known as fox nuts or lotus seeds, is a versatile ingredient used in both sweet and savory dishes. Here are some special recipes that make the most of makhana’s unique texture and flavor:

 

  1. Masala Makhana

Ingredients:

  • 2 cups makhana (fox nuts)
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon chaat masala
  • Salt to taste
  • Fresh coriander leaves for garnish

 

Instructions:

  1. Heat ghee or oil in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add makhana and roast for a few minutes until they become crispy.
  4. Sprinkle turmeric, red chili powder, garam masala, chaat masala, and salt.
  5. Toss well to coat the makhana evenly with the spices.
  6. Garnish with fresh coriander leaves and serve as a crunchy snack.

 

  1. Makhana Kheer (Fox Nut Pudding)

Ingredients:

  • 1 cup makhana
  • 4 cups milk
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • A few saffron strands (optional)
  • Chopped nuts (cashews, almonds) for garnish

Instructions:

  1. Dry roast the makhana in a pan until they become crispy. Set aside.
  2. In a saucepan, bring the milk to a boil. Reduce the heat and let it simmer.
  3. Crush the roasted makhana lightly and add them to the simmering milk.
  4. Cook on low heat until the makhana becomes soft and the milk thickens slightly.
  5. Add sugar, cardamom powder, and saffron. Stir well and cook for a few more minutes.
  6. Garnish with chopped nuts and serve warm or chilled.

Ingredients:

  • 2 cups makhana
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/2 cup yogurt, beaten
  • Salt to taste
  • Fresh coriander for garnish

 

Instructions:

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add chopped onions and cook until golden brown.
  3. Add ginger-garlic paste and cook for another minute.
  4. Add tomato puree and cook until the oil separates from the mixture.
  5. Add turmeric powder, coriander powder, cumin powder, and salt. Stir well.
  6. Add makhana and mix to coat with the spices.
  7. Stir in the beaten yogurt and cook on low heat until the makhana are well-coated and the curry thickens.
  8. Sprinkle garam masala and garnish with fresh coriander.

 

  1. Makhana Trail Mix

 

Ingredients:

  • 1 cup makhana
  • 1/2 cup mixed nuts (almonds, cashews, walnuts)
  • 1/4 cup dried fruits (raisins, cranberries)
  • 1 tablespoon honey
  • 1/2 teaspoon cinnamon (optional)

Instructions:

  1. Heat a pan and dry roast the makhana until crispy. Set aside.
  2. In the same pan, lightly toast the mixed nuts.
  3. Combine roasted makhana, nuts, and dried fruits in a bowl.
